Sourdough Tortillas
Be prepared for these amazing tortillas. I make them in almost triple the amount and freeze some so that I always have them on hand!
Note that this recipe takes a day as the dough rests!
Ingredients
500 grams flour (3 cups)
250 grams sourdough starter (1 cup)
50 grams olive oil (1/4 cup) OR if you want them on the chewy side 1 stick of melted butter
160 grams water (3/4 cups)
Directions
Add the sourdough starter, water, oil (or butter), salt, and flour to a mixer with a dough hook.
Knead for 2-3 minutes in a mixer, or 5 minutes by hand (props to you that is HARD). The dough should be slightly elastic.
Place the dough in a greased bowl, cover with a towel or plastic wrap. Have it sit at room temperature for 12-24 hours.
I will say sometimes I will place in the fridge overnight, so it is up to you!
The next day, divide the dough into 12 equal parts.
On a lightly floured work surface, roll each ball of dough out to about a 1/4 inch thickness. Ideally you want to get them as thin as you can!
Cook them in a preheated cast iron skillet (I have mine on medium or medium low as I have a gas stove). About 1 minute on each side.
