Pancake Muffins

I won’t lie. I have super lazy days where I really don’t want to make pancakes on the stove. These are super easy and last my house about two mornings so you can make these the night before or in the morning before your family wakes up so they are nice and

Ingredients

  • 1.5 cups buttermilk (or you can do 1.5 cups milk & 1 tablespoon apple cider vinegar)

  • 2 cups all-purpose flour

  • 2 tablespoons maple syrup or honey

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 2 eggs

  • 4 tablespoons butter (melted)

Directions

  1. Preheat the oven to 350 degrees F and line your muffin tins

    • I use a 12-muffin silicone pan but you can use whatever muffin tin you want you will just need to adjust the baking time.

  2. In your standing mixer or with a handheld mixer mix all the ingredients together.

  3. Using a 1/4 scoop place the batter into each muffin section.

  4. Bake for 20 minutes. Or until a toothpick comes out clean.

  5. Transfer the muffins to a wire rack and cool.
